Yinshan zhengyao 飲膳正要 "Correct preparation and application of delicious broth" is a book on medical diet written during the Yuan period 元 (1279-1368) by a physician called Hesihui 和斯輝 or Husihui 忽思慧 (of Mongolian or Uyghur descent), who was Palace Physician for Diet (yinshan taiyi 飲膳太醫) during the Yanyou reign-period 延祐 (1314-1320).
The book of 3 juan length is dedicated to a special diet that Hesihui recommended to Emperor Renzong 元仁宗 (r. 1311-1320). The preparation of these medical dishes and soups is described, as well as the herbs and other drugs used for them and how the food was to be applied. The book is thus actually be seen as a kind of pharmacopoeia specialized on diet. It is introduced by a preface written by Yu Ji 虞集 (1272-1348), on the recommendation of the emperor. Besides the great scientific value of the book, it also includes some statements about immortality that are rather to be seen in a traditional context and not in a scholarly one.
The book was in the 18th century preserved in Fan Maozhu's 范懋柱 (c. 1718-1788) library Tianyige 天一閣. Today, a print from 1457 survives. It is included in the series Sibu congkan xubian 四部叢刊續編.
